Description
Made from Pinot Noir Blanc (90%) and Chardonnay Blanc de Blanc (10%), was produced like a Champagne. After the hand-harvest, the grapes were whole-bunched, from which only the first press fraction, known as the “cuvée,” was used for this sparkling wine. Fermentation and aging of the base wine took place in small used wooden barrels. Only after 100 months of aging in the bottle was it removed from the lees and disgorged without dosage. A sparkling wine in the style of a great Champagne.
