BatchOne由四位日本酒的熱愛者合辦。四位不同背景的創辦人,透過進修高階清酒課程認識,在研習過日本酒釀造知識和拜訪過多家日本酒藏的體驗後,忽發奇想地同共研究『港人釀造』的可行性,便展開了BatchOne釀造的旅程。
有別於生產傳統清酒,BatchOne以生產Craft Sake為主,旨在研發不同風味的Craft Sake,開拓清酒類別的邊界,擴展清酒風味的多元性,讓更多非傳統清酒用家透過享受我們的Craft Sake,能對清酒產生濃厚興趣!
我們希望將港系文化揉合到Craft Sake當中,讓我們在喝酒的同時感受得到香港口味和情懷。這就是我們1st Batch的靈感所在。
我們的1st Batch,是以香港地道飲品『凍檸茶』作為BatchOne首個Craft Sake產品。
茶餐廳絕對是香港本地飲食文化當中最不可或缺的部分,從早餐、午餐、晚餐、特餐、常餐,甚至宵夜和外賣,『凍檸茶』即為其中一種最重要的日常飲品。茶餐廳文化乃香港本地人的集體意識所在,而所謂茶餐廳的文化和風味,皆來自己各位茶餐廳用家—茶餐廳所沖煮出來的紅茶風格,其實正正是本地人的口味所在!
香港茶餐廳提供的紅茶是非常講究的,那是需要用上好幾種茶葉混合,利用獨特的沖煮方式而成,那種萃取量與方式是其他地方所沒有的。港式『凍檸茶』作為香港人最熟悉的飲品,我們便將這種大家都喜愛的飲料元素加進Craft Sake當中。此產品採用了本地一家相熟茶餐廳的紅茶配方,再配合日本福岡糸島檸檬,揉合成為一款揉合港日風格的Craft Sake!
『COT』的生產工序嚴謹,它經歷過抱括蒸米、造麴、造酒母、造醪、投料、上槽等工序而成,而且全部人手操作,確保每個工序能妥當完成。為保持酒的新鮮清爽感,『COT』是 風格,在完成上槽後,單純以沉澱方式隔除酒渣,然後便進行灌瓶,以保存酒的最原始風味和微碳酸感!
如何享用『COT』?
正如港式檸茶有凍飲和熱飲,『COT』在不同溫度下飲用,能帶給你不同的享受。
花冷 10°C:入口清爽,具微碳酸感,花香和橘子味突出。
常溫 20°C:酸度柔和,檸檬和茶味突出,收結口感略佳。
人肌燗 35°C:甜感甚佳,茶味更濃,紅茶澀感明顥,檸皮味突出。
BatchOne is co-organized by four enthusiasts of Japanese sake. The four founders, each with different backgrounds, came together through advanced sake courses, gaining knowledge in Japanese sake brewing, and experiencing visits to numerous Japanese sake breweries. Inspired by their experiences, they whimsically embarked on a journey to collectively research the feasibility of "Hong Kong-style brewing," leading to the establishment of BatchOne.
Diverging from the production of traditional sake, BatchOne primarily focuses on crafting sake, aiming to develop various flavors of Craft Sake. Their goal is to push the boundaries of the sake category, expanding the diversity of sake flavors. By allowing more non-traditional sake consumers to enjoy their Craft Sake, they hope to spark a strong interest in sake. The founders aspire to blend Hong Kong's cultural elements into Craft Sake, enabling consumers to experience the unique flavors and sentiments of Hong Kong while enjoying their drinks. This inspiration led to their 1st Batch. For their inaugural batch, they chose the quintessential Hong Kong beverage, "Iced Lemon Tea," as BatchOne's first Craft Sake product.
Tea restaurants are an indispensable part of Hong Kong's local dining culture, serving as a focal point for breakfast, lunch, dinner, special meals, and even late-night snacks and takeout. "Iced Lemon Tea" stands out as one of the most important daily beverages. The culture of tea restaurants is deeply ingrained in the collective consciousness of Hong Kong locals. The flavors and culture of tea restaurants stem from the style of black tea they brew, aligning perfectly with the local palate.
Hong Kong-style iced lemon tea is a beloved drink among locals, and the founders decided to incorporate this widely cherished beverage into Craft Sake. The product uses the red tea recipe from a familiar local tea restaurant, combined with Japanese Itoshima lemons, creating a Craft Sake that blends Hong Kong and Japanese styles. The production process of "COT" is meticulous, involving steps such as steaming rice, making koji, producing yeast starter, creating moromi (fermentation mash), adding ingredients, and fermentation. All these steps are carried out by hand, ensuring each process is properly completed. To maintain the fresh and crisp character of the sake, "COT" follows a Junmai style. After completing the fermentation process, the sake is simply separated from the lees through sedimentation before being bottled, preserving the sake's original flavor and a subtle carbonation sensation.
How to Enjoy 'COT'?
Just like Hong Kong-style iced lemon tea can be enjoyed cold or hot, 'COT' offers different experiences when consumed at various temperatures.
Hana-bie 10°C (Cold): Refreshing on the palate with a subtle carbonation, featuring prominent floral and orange zest notes. This temperature provides a crisp and slightly effervescent sensation.
Room Temperature 20°C: Mild acidity with pronounced lemon and tea flavors, offering a slightly enhanced finish on the palate. At this temperature, you can appreciate the richness of lemon and tea aromas.
Hitohada-kan 35°C (Body Temperature): Excellent sweetness, intensified tea flavor, noticeable astringency from black tea, and a distinct citrus peel taste. This temperature brings out a well-balanced sweetness, robust tea flavor, and a pronounced character of citrus peel.
Therefore, you can choose to enjoy 'COT' at different temperatures based on your personal preferences and the desired experience, allowing you to savor its unique flavors in various states.
