Chapter 2 continues Romain Hénin’s Champagne exploration with a blend of 50% Pinot Meunier, 40% Pinot Noir, and 10% Chardonnay, from the 2023 harvest. Fermentation occurs naturally, with the same precision demanded for his other cuvées, and the wine is disgorged in December 2025, with no dosage. The nose is pure, clean, marked by ripe citrus, fresh apple, and a slightly chalky touch. On the palate, the bubbles are fine, the texture taut and straight. The zero dosage allows the terroir to express itself: freshness, energy, length. It is a precise, lively champagne that prioritizes balance and sincerity over showmanship.
